Crust
  1. 2 Cups of Graham Cracker Crumbs
  2. 2 1/2 tablespoons of sugar
  3. 1/2 cup of salted melted butter
Filling
  1. 4 (8 ounce packages of cream cheese)
  2. 1 cup of sugar
  3. 4 eggs
  4. 2 teaspoons of vanilla extract
  5. 1 tablespoon of lemon zest
  6. 2 tablespoons of lemon juice
  7. 1/4 cup all purpose flour
  8. 1/4 cup heavy whipping cream
  9. 1 cup of sour cream
Instructions
  1. Preheat the oven to 350 Degree F.
Crust
  1. In a mixing bowl combine graham crackers, sugar, and melted butter. (You can melt the butter in the microwave for 30 seconds and 10 second intervals until melted or use a pan on a stove). Mix together and place in a 9-inch spring form pan pressing on the bottom and sides forming to the pan. Now place in oven for 5 minutes. Take out of oven to cool and set aside.
  2. Turn oven up to 450 degree F
Filling
  1. In an electric mixer beat your cream cheese until smooth. Add sugar, eggs one at a time, vanilla extract, lemon zest, lemon juice. Beat for 1 minute. Add flour, whipping cream, and sour cream, and beat for an additional minute. Pour into prepared 9 inch spring form pan. Place in oven and bake for 45 minutes. Turn oven off, but don’t take cheesecake out of the oven. Instead open oven door slightly and set another timer for 2 hours. After 2 hours remove from oven and place in the refrigerator for an additional 4 hours until set before serving.
  2. Topping: Cover in cherry pie filling topping or any other berry.
