Chocolate Crust Birthday Cheesecake

There is nothing better on your birthday than a chocolate crust birthday cheesecake.   What is even better is if you have a gluten allegory you can make this with a gluten free brownie crumble.  I know this is a hit with kids, adults, work parties, christmas parties, and of course birthday parties.

Crust
  1. 2 cups of Oreo cracker crumbs
  2. 1/3 cup of white granulated sugar
  3. 1/4 teaspoon of cinnamon
  4. 1/2 cup of salted melted butter
  5. Filling
  6. Three (8 ounce packages of cream cheese)
  7. 1 cup of white granulated sugar
  8. 1 tablespoon of lemon zest
  9. 2 teaspoons of vanilla extract
  10. 4 large eggs
  11. 1/4 cup heavy whipping cream
Topping
  1. 12 ounces sour cream
  2. 2 tablespoons of sugar
Optional
  1. Carmel drizzle as shown
  2. Chocolate drizzle
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Melt a half a cup of butter in a microwave safe bowl for 30 seconds with 10 seconds continuing after or melt in a pan. In a mixing bowl add Oreo crumbs, sugar, cinnamon and melted butter and mix together thoroughly. Then place into a 9 inch spring form pan pressing on bottom and sides. Place in oven for 5 minutes and set aside to cool.
Filling
  1. In a mixer add cream cheese and mix while slowly adding sugar. Add the 4 eggs one yolk at a time allowing them to mix before adding next one. Add lemon zest (done by using a fine grater and peel of lemon) and vanilla extract. Add heavy cream. Mix until smooth and pour into the prepared 9 inch spring form pan. Bake for 70 minutes or until firm. Take out of oven and let cool for 5 minutes.
Topping
  1. After cheesecake has cooled for 5 minutes. In a clean or separate mixing bowl combine the sour cream and sugar until thoroughly mixed. Place on top of the cheesecake smoothing over the surface and place back into the oven for 5 minutes or until sour cream has a nice brown to it. Take out of oven let cool for 15 minutes and place in refrigerator.
Optional
  1. Before serving drizzle carmel, chocolate, add cherry preserves, cones, whip cream, Oreo crumbs or any other decoration you desire.
